Add option to use pixi for python

Pixi is a fast package manager for pypi and conda packages.

The scope of Pixi seems very vast it looks like a replacement for nix itself, I am not sure if we should add this option.

Oh, wow, conda packages software outside of the python ecosystem now? Wild!

Parts of it are in the same ballpark as uv, but then it looks like it launches its own shell. We'd need someone familiar with this tool to figure out how this would work within a nix shell.
