Retire `relay-pkg.so` mostly

Relay needs:

  • hiredis >= 1.1.0
  • openssl >= 1.1.0
  • ck >= 0.7.0

Let's start referring to relay.so in:

  • [ ] relay-docs
  • [ ] Linux repos (when possible)
  • [ ] Docker examples
  • [x] macOS (x86) homebrew tap

macOS (arm64) needs to keep using needs to keep using it, because the ARM edition needs an unreleased concurrencykit version. https://github.com/cachewerk/homebrew-tap/issues/2
