I'm not really sure which controls this device could be given via HomeKit? or which data could be made visible by some sort of sensor?

ihost is a kind of hub where you can expose components that are not compatible with the ewelink platform 8zigbee, matter, etc) you could for example use ihost to install with docker homebridge without requiring a raspberry
