[DOC] Hybrid management of the configuration

I have some expertise managing Nginx configurations. It is possible to run the docker with the env variables that are not related to nginx and do all the nginx config manually or edditing the existing one? Will the changes be lost with updates or reboots?

In a multisite configuration I think is a little bit confuse to have everything in the docker compose particulary when you do to many changes for the default. https://config.bunkerweb.io/
