Controlling concurrency page updates + general docs spelling updates

As part of reviewing #2620 , I wanted to understand more context around Buildkite's concurrency features and so I've created this PR to clarify some of the surrounding content on this 'Controlling concurrency' page.

As part of this PR, in line with our style guide, I've corrected the spelling of any 'cancell...' words to 'cancel...' (i.e. US spelling). The same goes for the following words: 'behaviour', ...

Actually, in retrospect, after having reviewed and revised https://github.com/buildkite/docs/pull/2620 (that this PR relates to), this PR no longer needs any further updates.

@mbelton-buildkite , when you'e a spare moment, would you mind approving this PR so I can merge in the other changes it contains please? Shouldn't take long to review since it only essentially contains UK/Aus English to US English spelling updates.
