Calendar modes should be able to be configured with configs which are not overridden by the Calendar's own version of those

[ExtAnimal]

So if a mode has a project, it should use that project, not the Calendar's project.

This principle should apply to all configs which default in from the Calendar.

Related to https://github.com/bryntum/support/issues/11049 but this was prompted by a requirement to use chained stores, or a different project to get a different perspective on data in multiple modes.
