update aws-iam-authenticator to 0.5.5 or higher

There is a fairly substantial breaking change in 0.5.4. I tried and it breaks our eks-provider. We might have to replace v1alpha1 with v1beta1 in our kubeconfigs or something.

Basically when updating to a newer aws-iam-authenticator, I found it to be incompatible with the kubeconfig files we were getting from eksctl.
