It would be great to just press ctrl + s and either the note is updated or action to save it.

Have you seen this section of the readme? It contains some suggestions for keymaps. The plugin follows the common guideline to avoid setting keymaps that may clash with the workflow of the user and instead suggest which one the use may be interested in adapting. In the readme you'll find two keymaps that implement exactly what you are asking. Is that the feature you are looking for or did you have something different in mind?
