️🛠 - Fix polling of confirmation status of transactions

Task description

We are kicking off the poll for confirmation status of transactions before the activity is generated, so if we have a transaction with no confirmations and then it polls it puts it as confirmed, this is not picked up by the activity generation because it already stored the old transaction object to update.

Requirements

Fix the logic and flow of data when generating activities and then tracking the confirmations for the activity.
