Apostrophes (') must be escaped in xml.

This is needed if we want to put apostrophes (') in the application name.

@blakgeek Is there a reason this hasn't been merged? I found my way here because of https://github.com/apache/cordova-ios/issues/717, and would prefer to be able to use the main version of this package via npm, instead of having to pull in a fork from @mibzman (although I am liable to do so in the short term, thanks Sam :D)
