CI should be run against supported Core releases in addition to master

Preventing regressions.

It seems Bitcoin Core (and all simulators) are built during a CI run. It would be much more efficient to fetch the binaries instead (checking their shasums). Then one could run against older versions of Core and of older versions of the simulators.
