Improve mention user search

Something I realized while testing https://github.com/bisq-network/bisq2/pull/1978/ - search results would better be sorted by placing the results that match by prefix first. E.g., if I type 'Hen' I'd expect to always get:

  • HenrikJannsen
  • AAA-HenrikJannsen

instead of:

  • AAA-HenrikJannsen
  • HenrikJannsen
