docs updates actions fail, published docs very outdated

That page https://bids-standard.github.io/pybids/ is still at 0.16.4 It seems that docs publication to gh-pages branch fail https://github.com/bids-standard/pybids/actions/runs/18564082026/job/52920273171 Maybe some expired tokens?

TBH we should just switch to readthedocs. gh-pages for libraries is a mistake.
