Awful Camera Movement
In all of the versions in the betacraft launcher, there is awful camera movement. This bugs me a lot. (I use Big Sur 11.6.1).

An ARM Mac or Intel Mac? Does it happen after updating to MacOS 12 Monterey? Are you on Java JDK 8 Update 51, that’s the recommended.
It appends for me too, I'm on Intel Mac with Monterey 12.1 and I'm using Java JDK 8u202, and I'm having the same issue

Seems like it's LWJGL the problem here
Tried changing Java version, Updating LWJGL, but nothing, I think the only thing you can do its to downgrade macOS or play it with a Live ISO of linux or pray that you can set up a nice VM with Graphics Acceleration
