Chore: Update image refs in the docs (Examples and Getting Started guide)

Description

As per internal discussion, some of the older images, especially in Azure, were ending up in errors in some special scenarios. I propose to update the image references in internal E2E test-scenarios and afterwards in the docs.claudie.io as well, for a better onboarding experience.

Exit criteria

• [ ] E2E image refs have been refreshed
• [ ] Examples and Getting Started guide in the docs has been updated to refer to the images that behave reliably in the E2E tests.

I came across this problem when preparing the Azure manifests for the meetups. I'll update this issue once I have more information and I can reproduce the problem. Let's consider this one parked for now because it's blocked by https://github.com/berops/claudie/issues/1274
