Update distribution name from 'galley' to 'galley-proof'

Update package distribution name from 'galley' to 'galley-proof' to sidestep name collision on readthedocs and pypi. Also change 'pybee' to 'beeware' everywhere to fix broken links. Resolves #2 and resolves #9.
