Nestjs 10 Upgrade

We need to keep Nestjs updated as it is our main backend framework.

[ ] Review the migration guide from 9 to 10.
[ ] Consider upgrading Typescript to its latest version.
[ ] Consider upgrading the target in the tsconfig.json to the last possible version.
[ ] Validate if the new module override feature can replace our overrideImportsMetadata.
