Upgrade Vuetify and Fix Issues UI Issues

Upgrade Vuetify package and resolve possible UI issues.

Acceptance criteria

• [ ] Upgrade Vuetify to the most recent version.
• [ ] Perform a smoke test in main features, for instance, but not limited to
  • Student
    • Application creation.
    • Menus navigation.
    • Access to all the pages.
  • Institution
    • Program creation.
    • Offering creation.
    • Menus navigation.
    • Access to all the pages.
• [ ] Tentative to have any layout issue fixed.
  • If not possible, check with the team about the possibility of resolving blocker issues only.
  • If not possible to resolve an issue considered a blocker, check with the team the plan.
