Make the history configurable (more than default 15 minutes)

I'm not 100% sure - but it looks like the "memory" is 15 minutes for tracking target humidity - which is a bit on the low side in my envioronment. This patch makes SAMPLE_DURATION configurable - in order to lengthen the window. It is tested in my environment.
