Allow changing the default (fallback) images for EKS

Is your feature request related to a problem? Please describe. I would like to use my custom images by default for each cluster without having to use the CLI to launch a cluster with a custom image.

Describe the solution you'd like to see I'd like to configure a list of default images.

Additional context This is especially important for compliance reasons.

Maybe we should also be able to disable cloudinfo as a source for images?
