Environment Variable Override Does Not Accept pipe '|' character

I have a variable in Jenkins containing a pipe '|' which does not get sent to AWS. I have tried single and double escapes, but it makes no difference.

JMeter shows the pipe and escapes: image

AWS does not see them: image
