[Story]: Go: Clean up and improve IAM examples

The user story

As a Go dev, I want to have good quality IAM examples so that I can learn and use IAM with Go.

IAM examples in Go are of middling quality. Bring them up to the current MVP standard.

I know this is done when:

  • The actions and scenario from the linked epic are well-implemented and published into SOS with tests and README.
