Unpin dependencies after bumping MSRV beyond 1.84

Problem:

Dependent bot tried to upgrade the following dependency but failed due to requiring MSRV >= 1.84:

  • s2n-tls: checkers https://github.com/aws/s2n-tls/issues/5498

Solution:

Upgrade the dependency after updating our MSRV
