Update deprecated `containerd` registry mirror config

What would you like to be added: In release v1.5.0, containerd deprecated the configuration for registry mirror we are currently using. The new way to configure registry mirrors can be found here

Why is this needed: Avoid using deprecated configuration and ability to freely upgrade containerd. However, it seems like there are no plans for removal as of now so this is not a pressing issue.
