Enhance/fix logging in the controller

Is your feature request related to a problem? The controller logging is not friendly for users to debug what’s going on and some areas (e.g sidecar injectors) do not have logging in place.

Describe the solution you'd like We should improve the logging across the board, add logging where it’s missing and provide documents on how to debug controller issues
