[Feature Request] Modify envoy log format via injector

Provide the ability to modify Envoy log format via the Injector. Envoy has support for this.

The Envoy image currently does not expose a way to configure log format. This will be visited post v1.1.1

Changes on the envoy config end will not be available in the near term. So, moving the issue to 1.3.0.

Configurable log format support will be added in the subsequent releases because of the envoy dependency. Removing the 1.3.0 milestone

A similar ask for configurability on Envoy is asked here: https://github.com/aws/aws-app-mesh-roadmap/issues/292

This is a candidate to expose these params in a way we don't need new Envoy releases for each change
