Updates CDK to latest version 2.125.0

Description of changes:

I've updated aws-cdk and aws-cdk-lib to 2.125.0, and removed the now deprecated use of the alpha apigateway modules. I've also bumped a the previously missed solution version numbers to v1.2.2 .
