[Booking] Decouple flights from booking data model

Currently, flights within booking are done through @connection (GSI).

As we work to implement a cleanup strategy to keep costs down for customers, we could clean up flights DB more regularly than bookings due to the discrepancy in size -- This will be even more important when ETL feature is out.
