update all dependencies to the latest version
Issue #, if available: No issue available, but during Discord Office Hours I spoke with the Amplify team, about the dependencies being out of date in this project, particularly Next.js being on a version which was published 7 months ago
Description of changes: Update all dependencies to the latest version on npm, as of May 17 2024. After installing all versions in this PR, I ran the project locally to test that it works as expected. The project runs fine, I've attached a screenshot showing the project running with these updates.
