Convert `management.UserDateSchema` to `time.Time`

Describe the problem you'd like to have solved

In v1 user timestamp fields are *time.Time which makes them easy to use.

In v2 they are *management.UserDateSchema which is not easy to use.

Am I supposed to parse the String? What even is the StringUnknownMap?

Describe the ideal solution

Add a function or method to convert a UserDateSchema to a time.Time.
