sa2: Only one joystick is supported

The Paddle class is somewhat misnamed (a paddle is one-dimensional, a joystick is two paddles), but more importantly only supports one joystick when AppleWin supports two.

I don't think there are all that many games that support two joysticks, but just filing while I remember.

I take that back, there's at least one important game that is dual joystick, such as:

Note that the 4am crack and the "UNTOUCHED" disks don't actually work for me, including in sa2-macOS. I'll verify against AppleWin before filing an issue. The one_on_one.dsk works.
