Sync CodeSandbox + Docs Examples with Latest Schema Version

We’re currently showcasing examples in both the CodeSandbox demo and the docs that uses the v2 of the spec. It’s a good time to update both and align them with the latest spec version we support.

This helps keep our examples updated, and ensures everything reflects current capabilities.

Here’s what needs to happen:

• Update the CodeSandbox example to use the latest AsyncAPI schema version

• Update the example in the docs to match the same schema version

• Double-check that both examples still render properly and nothing breaks

• Confirm the latest spec features are reflected in the example
