Update docs to use Spectrum.plot

I see that Spectrum.plot method exists but is not used in the documentation; pyplot is used instead. See Basic Spectrum Creation. Is this on purpose? I assume we should be encouraging folks to just use Spectrum.plot once they make their Spectrum object?

(Maybe related to #1106 ? )
