I have uploaded a 50GB file to Google Drive via web interface and the folder this file is in doesn't open in the fuse file system. I can mount ok and see all the other Google Drive content but that particular folder seems to "load" forever. I understand Google-Drive-Ocamlfuse doesn't sync, i.e. store local copies, so shouldn't need to first download this file, right? But a download of sorts is happening and continues even when the system monitor shows way more than 50GB downloaded. Can someone advise me what I'm doing wrong?

The idea is to mount a veracrypt container stored on Google Drive.

I wouldn't do this, because each time you change a single byte, the 50GB will be uploaded. You should probably use something like rclone or drive and script your mount/unmount of the veracrypt container to also sync the file on your Drive.
