Fix docusaurus dependencies to accept minor patch versions

As per title, allowing minor version dependencies of Docusaurus v3. Related to Issue 907.

Hey @timothymamo, Before accepting these changes, we will check if all the other dependencies work fine. I've tried this before, and the fact that Docusaurus 3.7 is moving from React 18 to 19 was causing some issues.

We will accept it as soon as we are 100% sure this will not cause bugs.
