Document changes are not picked up when using Emacs eglot with a symlinked folder

There's some oddity wrt URIs and paths (e.g. eglot doesn't encode ( and ) inside a URI). Plus it seems like it's starting 2 server instances (one for the symlinked folder and the other one for the original one). Emacs v29.1
