remove gen2 profiles from code and docs

gen2 profiles were deprecated in v0.10, and therefore should be removed in v0.11.

Do we want to refer to the current-gen (used to be next-gen) profiles as gen2 profiles and remove the gen1 profiles only? This is still somewhat confusing in docs - though we know that appProfiles have replaced the profile CR.
