feat: add .ipynb for adding and updating models to `ollama`

Hey! Maybe we can keep this internal if only to be used to add and update models within ollama? Otherwise I think we're good with making this a Python script instead and parametrize it to allow for future versions, rather than a Jupyter Notebook IMO 👍🏻
