IDEA: Add tests for Windows

Interestingly enough, we run Windows in our dev team, and we all updated to a new Firmware update, yet somehow graphql/mesh on our local machines seemed to stop generating our local schemas?

Would these tests include testing @graphql-mesh/transforms as well?
