Fix build errors in Storybook

After the migration to TypeScript, no work has been put in to fix any of the build errors that occur on the Storybook site: https://app.netlify.com/sites/storybook-architus/deploys

We need to fix this so we can continue to iterate on our Storybook documentation

Once finished, we can re-enable Storybook build checks in PR checks
