research: WDS font-family options, corresponding font-weight tokens

  1. We need to evaluate whether we should provide font-family selection options and if yes which ones
  2. We should switch from GFonts to self-hosting options, see #21427 and #20365
  3. Font-weight tokens should be tailored to specific font-family options (extra points for accounting for light/dark mode and OS)
