Get a green build matrix on Swift Package Index

SwiftNIO compiles fine for the various Apple platforms, but we don't typically CI on them. As a result, our tests tend not to build. This has led to our build matrix on Swift Package Index implying that we don't support platforms that we do. We should quickly clean those up.
