🧽 Reorganize folder structure

We have a lot of top-level folders, requiring to scroll a bit before the README.md is visible. We could reorganize that so that all the apollo- folders are under a common top-level folder.

It would also be an opportunity to make the top-level build the composite build by default so that someone opening it in IntelliJ has all integration-tests in the IDE
