Stable(r) version of ghcr.io/apigee/registry-tools:latest

Hey @timburks,

Are you building any docker version tags for the ghcr.io/apigee/registry-tools image?

I'm building a custom container from this and would prefer a stable or more stable version than the latest

I could not find a way to see the existing images, if you know this please educate me :-)
