Correct setup

Hi, I have tried setting up the transfer server for a fiat stablecoin i am working on. I had to figure out by going through the code some environment variables needed to get things to work, i think they should all be listed in one place , if not developers will not know they are needed.

After all that though, SEP validation using the stellar.validator is still failing, please are there any more steps needed to get everything working, becuase i notcied that test.apay.io is passing all the tests.
