[fix][test] Prevent OOM in test by not spying invocations in SimpleProducerConsumerTest

Motivation

  • there are OOMs in test runs such as https://github.com/apache/pulsar/actions/runs/11390425506/job/31692462848?pr=23449#step:11:1687
  • it's not necessary to spy invocations that consume a lot of memory

Modifications

  • remove configuration that enabled spying of invocations that was added in #23313 since it was assumed that it was necessary
