[Feature][Metrics] Work Item Age

Use case

I'd like to be able to see Work Item Age (not just Bug and Incident) because the age of any item is a critical metric for performance management

Definition per the Kanban Guide: The amount of elapsed time between when a work item started and the current time.

Description

Rather than just incident and bug age, I'd like to see age for any type of item. This is a major part of flow management practice in Pro Kanban, and a really simple metric for teams to track in order to prevent accumulating WIP or declining throughput.

This wouldn't be the same as https://devlake.apache.org/docs/Metrics/RequirementLeadTime but would instead measure how old current WIP is, and ideally in a way you can sort it from oldest. It would be ideal to have the ability to automatically send an alert when age passes a defined threshold.
