[Doc][README] Update slack link

The slack link needs to be updated, it looks like the existing link is either expired or no longer working

Hi @badstreff , there's someone joining the Slack channel through the existing invite link three days ago. And I remember that this is a permanent link. So could you try it again?

So after a bit of searching though the docs I eventually found this link that appears to work. If this is the intentded correct link I can make a PR

Interesting.... have you tried opening the original link I pasted above incognito? If it's just slack being weird for me and the link works I don't see the need to raise a PR and feel free to close the issue.
