[Task]: upgrade Neo4j java driver to 5.x

What needs to happen?

Neo4j released Java driver 5.x over a year ago. This will require some code changes in Apache Hop, but will (among other things) allow for better integration with Neo4j Auro

@bamaer and @mattcasters - With version 6.x https://github.com/neo4j/neo4j-java-driver/releases now GA of the driver this should probably be looked at soon

@pierremartignon yes, absolutely. I created #6206 earlier today, which contains the upgrade to 5.x. With the major and breaking changes in 6.x, I wanted to upgrade to 5.x first and then go to 6.x, but any feedback or input would be very much appreciated!
