Remove amazon-kinesis-client dependency override

Quarkus 3.29 upgrades protobuf-java to 4.x, so we need a newer amazon-kinesis-client to stay compatible.

We previously held back the upgrade in the Camel core, so we'll need to unblock that to remove the workaround in this project.

I've aligned to the latest 3.1.3.
